The Story Behind It

The marshmallow takes its name from the marsh mallow plant, Althaea officinalis, whose root sap was once whipped with sugar to make the sweet. In nineteenth-century France confectioners turned it into the soft pâte de guimauve, and gelatine later replaced the plant altogether.
